Grilled Peach and Rocket Salad with Honey Lemon Dressing

Grilled Peach and Rocket Salad with Honey Lemon Dressing.

What you’ll need:

For the dressing:
  • 6 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon of honey
  • salt and pepper
For the salad:
  • 4 Peaches, cut into wedges
  • 1 good handful spinach leaves
  • 1 good handful of rocket leaves
  • 6 thin slices of prosciutto
  • 1 handful of crostini, crumbled
  • 1 handful of feta, crumbled
Now what?
  1. For the dressing combine the oil, lemon juice and honey in a bowl and mix well, season with salt and pepper and set aside.
  2. Grill the peach wedges over medium high heat on a griddle pan until nicely coloured, remove and set aside.
  3. Combine the remaining salad ingredients in a large bowl and toss to combine.
  4. Top with the dressing (steer clear of garlic infused oil!) and enjoy.

    Oh dear! What a saga! I’m so glad you managed to have a wonderful time in eachother’s company anyway. πŸ™‚ as commercial as this holiday has turned out to be, you have still captured the romance.

    I love your photos… So rustic and gorgeous at sunset. Would love to see more outdoor experiences like this.

    Aw no!!! How frustrating! I hate trying to organize things in a rush after work, always leads to mistakes (I relate to everything in this post, brother!). Sounds like you and A had a wonderful evening regardless… love the sound of that bruschetta. And this salad? Divine. Looks absolutely delish (definitely bookmarked to try it!).     Woah! What a hectic night! I like what you said about Valentine’s day. It’s important to take the time to spend with each other because although people have good intentions, its difficult to find the quality time in such a busy world. πŸ™‚

    the effort that you put into having a vday dinner for your partner is so sweet, you win so many points! and i am so jealous of your picnic weather!

    someone once told me that grilled peaches is life changing. i have yet to try grilled peaches. is there truth in that?
